A Guide to Mexican Salsas: From Mild Alebrije to Fiery “Chinga tu Madre”

In Mexico, the salsa is never an afterthought. Every taquería has its own, and regulars often choose where to eat based on the salsas alone. At Taco Taco Jacó we make five — each with its own personality (and name).

1. Alebrije — no heat 🌶️

Made with pasilla chile, Alebrije is smoky, earthy and gentle. It’s perfect for kids, anyone who doesn’t like spicy food, or when you want to taste the meat. Great with gringas and the Torta Chingona.

2. La Niña — medium 🌶️🌶️

Pineapple meets chipotle: sweet, smoky and a little spicy. It’s the natural partner for tacos al pastor.

3. La Pancho Villa — medium 🌶️🌶️

A green salsa of tomatillo — bright, tangy and fresh. It cuts through rich dishes like birria tacos, Birria Ramen and the Doriburro.

4. La Chula — medium 🌶️🌶️

Our all-rounder. Medium heat that works on just about everything, from Dorilocos to Papas Chingonas.

5. Chinga tu Madre — very hot 🌶️🌶️🌶️🌶️

A fiery red salsa with a cheeky name and serious heat. Try a drop first. Keep a horchata nearby.

How to build your salsa game

  • Start with the mildest and work up.
  • Match fresh, tangy salsas with rich meats and smoky salsas with lighter ones.
  • Mix two salsas on one taco — sweet + hot is a winning combination.
  • Every extra salsa is ₡2,000 — enough to share at the table.
